Vegan Chocolate Chip Protein Cookies

Craving cookies? Try these healthy vegan protein cookies next time you need a treat without the guilt!

  • 3 Tbsp flax meal plus 1/2 cup water (let sit 5 min)
  • 2 ripe, mashed bananas
  • 2 cups gluten free oats
  • 1 cup shredded coconut
  • 1/2 cup almond butter
  • 1/3 cup coconut sugar
  • 1/4 cup maple sugar
  • 1/4 cup coconut oil
  • 2 scoops Organic VeganSmart french vanilla pea protein
  • 1 Tbsp cinnamon
  • 1 Tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
  • Optional add-ins: 1/2 – 1 cup mini chocolate chips and/or 1/2 cup hemp hearts.

Mix everything together in a large bowl and drop by spoonfuls onto a parchment lined cookie sheet. Flatten gently. Bake at 350°f until golden!
