VeganSmart’s Wild Berry and Coconut Popsicles

Cool off this Fourth of July with VeganSmart’s sweet and healthy wild berry and coconut popsicles recipe that is satisfying for the whole family!

Here’s what you’ll need:

1 15 oz can of full-fat coconut milk

1 teaspoon of pure vanilla bean paste

1/4 cup of agave

3/4 cup of blackberries

3/4 cup of raspberries

1 scoop of VeganSmart Wild Berries 

Instructions:

  1. Whisk the coconut milk, vanilla paste, 2 tablespoons of agave, and VeganSmart Wild Berries together. Once the mixture is smooth and creamy, set it aside.
  2.  Blend together the raspberries, blackberries, and the remaining agave, until smooth and combined. Add more agave, to taste, as necessary.
  3. Stir the coconut milk mixture and the berry puree together and divide evenly among the popsicle molds.
  4. Freeze for 30 minutes. After 30 minutes, insert the popsicle sticks, and continue freezing for 4 hours, or until firm.
